One of those dedicated leaders is Brad Peters, of HRBUniversal, an EduProctor™ whose career spans corporate leadership, auditing, instruction, and proctoring. His journey reflects a deep commitment to food safety, hospitality, and continuous growth.

Personal & Professional Journey

Brad’s entry into public health and food safety wasn’t planned—it was born from a pivotal career shift. “It fell into my lap after being laid off in 2009 as a corporate chef when the economy tanked,” he recalls.

That transition revealed to him the critical importance of food safety. “Anyone who is in food service should have a passion for food safety in order to protect their business and customers,” Brad explains.

Though he lives in Florida, his work spans nationwide. Instead of being shaped by one state, his approach is defined by the universal challenges operators face across the country—especially the complexities of the legislative process for regulatory approval.

Brad’s diverse career roles—as a 3rd Party Auditor, instructor, and proctor—all complement one another. “These roles are not just separate jobs; they form a cohesive and reinforcing professional identity,” he says. As a 3rd Party Auditor, he gained a unique perspective compared to government inspectors. Rather than simply enforcing regulations, Brad sees himself as a bridge between rules and operations: identifying issues while educating foodservice operators on how to implement effective solutions. “Essentially, you can be a partner in their success rather than just an enforcer of rules,” he explains.

Teaching & Impact

When asked what he enjoys most about teaching and mentoring, Brad is quick to highlight the diversity of the foodservice world: “Understanding how food safety and operational information applies across the diverse landscape of the food service industry.”

He especially values the exchange of ideas with those he trains. “I really value the chance to learn from the people I work with, hearing about their business concepts and the day-to-day realities of their operations,” he shares.

For Brad, the most important takeaway from his training is clear: “Understanding the importance of food safety in preventing foodborne illnesses is crucial for business success.” He also recognizes a challenge—many participants see certification as simply a requirement rather than a professional growth opportunity. His mission is to shift that mindset by showing how food safety directly impacts careers, businesses, and communities.

Becoming an EduProctor™

Brad became an EduProctor as part of expanding his products and services to better serve clients. Joining EduClasses® has given him new ways to reach more people. “People in the industry need to understand that there isn't just one product available to meet their certification needs,” he notes. “The options are expanding to include different learning styles and business requirements. It's about finding the right fit for your operation, not just a one-size-fits-all solution.”

For those considering becoming a proctor or instructor, Brad offers this advice: “Becoming a certified instructor or proctor demonstrates to companies and superiors your readiness for new challenges and your commitment to knowledge growth, ultimately contributing to the operation's development.”

Reflection & Future Goals

Looking back, Brad is proud of proving his doubters wrong. “Proving wrong those who doubted my dedication to the hospitality industry, and demonstrating the extent of success attainable,” he says, is his greatest accomplishment so far.

What keeps him motivated is straightforward: “The Bottom Line.”

Looking ahead, Brad is excited about his latest venture: a weekly podcast called "From the Kitchen to the C-Suite". The podcast offers foodservice and hospitality professionals insights into the industry’s evolving landscape. Each episode tackles daily challenges, while shorter “podcast shorts” provide quick takes on specific topics.
